Description

These soft and chewy lemon sugar cookies are bursting with fresh citrus flavor. Rolled in sparkling sugar and baked until golden, they’re the perfect balance of sweet and tangy.


Ingredients

Scale

1 cup all-purpose flour

1/3 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/3 cup unsalted butter softened

1/2 cup granulated sugar

1 large egg

2 teaspoons fresh lemon juice

1 teaspoon lemon zest

1/3 teaspoon vanilla extract

3 tablespoons coarse sugar for rolling


Instructions

Preheat oven to 350°F and line baking sheets with parchment paper.

In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.

In a large bowl, cream butter and sugar until light and fluffy, about 3 minutes.

Beat in egg, lemon juice, lemon zest, and vanilla extract until well combined.

Gradually mix in dry ingredients until just combined.

Roll dough into 1-inch balls and roll each ball in coarse sugar.

Place cookies 2 inches apart on prepared baking sheets.

Bake for 10-12 minutes until edges are lightly golden. Centers will look slightly underdone.

 

Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

Don’t overbake – these cookies are best when they’re soft and chewy in the center. They’ll continue to set as they cool.
